Manual harvest in 15 kg boxes and a strict selection of grapes in the vineyard. The grapes are then refrigerated in a cold room for a few hours to obtain aromatic precursors. Then, they are destemmed and go into a long maceration with the skins, pumping-over the must to extract the coloring matter from skins, while it ferments.<\/p>\n<p>It is then gently pressed and finally malolactic fermentation is carried out. <strong>Aged for 12 month in oak barrels from France and Central Europe, afterwards it settles for 18 months in bottle<\/strong>.&#8221;<\/p>\n<p>&#8212;<\/p>\n<p><em><b>Look:<\/b><\/em>\u00a0it has a dark cherry colour, blueish and violet hue.<\/p>\n<p><em><b>Smell:<\/b><\/em>\u00a0ripe berries, balsamic aromas such as lavender and rosemary. Spices and toasted aromas from the aging process.<\/p>\n<p><em><b>Taste:<\/b><\/em>\u00a0smooth and pleasant mouthfeel. Good and balanced acidity. Full bodied Balsamic and berries aromas. Licorice, dark chocolate.
